Watermelon On the Rocks

Ingredients :

  • 2 teaspoons Ice tea powder
  • 1/2 glass Watermelon juice
  • Lime juice
  • Sugar
  • Ice

Procedure :

  1. Add water to the ice tea powder and stir well so there are no lumps.
  2. Mix in the water melon juice, lime juice and sugar. Shake well.
  3. Place ice cubes in a tall glass. Pour in the blend and serve chilled.

Variation

You can try out the same recipe with apple juice and honey instead of watermelon juice and sugar.

Please NOTE :

You need to check the sugar content in your ice tea powder and alter the water/sugar content accordingly. I used Nestea and was satisfied with the drink.

Sweet and Sour Crunch

Sweet and Sour Crunch ( Recipe Source : Pavitra Jain)

Last Sunday we neighbors met for a potluck lunch. The flavor of this salad left me wondering what the dressing could have to make it so unique. Its a cousin of the coleslaw yet very different in its taste and appearance.

I am definitely going to make this the next time I have guests over. Hope I can do justice to the original recipe. Here it is…

Ingredients :

For the dressing

  • 2 teaspoons Mayonnaise
  • Pinch of pepper powder
  • 1 teaspoon Dry herbs powder (mix of oregano, basil, rosemary)
  • Few drops of Vinegar
  • Salt (to taste)
  • Sugar (to taste)
  • Few drops of fresh lime juice

For the salad

  • 1/2 Grated carrot
  • 1/4 Capsicum
  • Few Lettuce leaves
  • 3 Beans
  • 1/4 cup Corn
  • 1/4 cup Pasta
  • 1/4 Apple
  • 1/4 Orange

Procedure :

  1. Grate the carrot and shred the lettuce.
  2. Finely chop capsicum, beans and apple.
  3. Squeeze lime juice over apple pieces so they don’t go brown
  4. Parboil beans and corn. For this you need to boil water add salt, beans, corn and turn off the heat. Cover and let the vegetables simmer in their own steam till they cool off.
  5. Remove skin and pips of the orange pieces and extract the juicy, inner orange pulp.
  6. Boil the pasta in salt water till its tender.
  7. In a mixing bowl add carrot, capsicum, lettuce, parboiled beans, parboiled corn, pasta, apple and orange pieces.
  8. Mix in the dressing ingredients. Serve chilled.

Variation

  1. If you dont find lettuce you can use cabbage
  2. Along with beans and corn you can also parboil fresh peas.

Mixed Vegetable Soup

Mixed Vegetable Soup

Soup is a safe drink to keep the stomach healthy and can be given almost every day to the baby. When babies start taking in new and different types of food they sometimes get constipated. Mixed vegetable soup is a way of giving babies some relief from this problem.

Carrot gives this soup sweetness while cabbage makes it mildly saline owing to its natural salts. Pudina leaves give it a minty flavor which serves as a welcome change to the developing taste buds.

Ingredients :

  • 2 teaspoons of yellow moong dal
  • Few pieces of lauki, carrot, cabbage and pudina leaves

Procedure :

  1. Mix moong dal with lauki, carrot, cabbage and pudina leaves.
  2. Add 2 cups of water and pressure cook till dal and veggies are done.
  3. Now strain this using a juice strainer. The amount of roughage to keep or leave in the strainer is upto you. You can make the soup as thick as your baby likes.

Mashed Fruits

Mashed Fruits

Most babies love fruits as thats the maximum sweet they get to eat. The mix described below is also useful in relieving the baby from constipation. If baby’s stomach is fine then you can go on to strain a few pieces of mashed apple to this fruit chaat as well.

Ingredients :

  • 1/2 a pomegranate
  • 1/2 a sweet lime (musambi)
  • 1 small banana

Procedure :

  1. Take out the seeds of the pomegranate.
  2. Strain it with the mashed banana.
  3. Squeeze the juice of sweet lime into it.
  4. If baby doesnt have constipation mash an apple into it too.
