Vegetable Nutri Pie

When I saw the event for making a Balanced Breakfast I immediately remembered my mother’s innovative vegetable pie that she used to make so we would not crave for junk food. Attractive as it looked, we never really imagined that it was meant to be healthy.

In this recipe we use wheat flour, vegetables and bake the dish making it a lot better than other spicy, deep-fried snacks we eat. If you add some sprouts to the vegetable stuffing it becomes even more nutritious. You can try this out on a lazy Sunday morning when you are in no mood to head off anywhere.

Thanks Mansi for giving me a reason to try out my mom’s treasured recipe.

Ingredients :

  • 1 cup Wheat flour
  • 1 teaspoon Maida
  • Pinch of Carom seeds
  • 1/4 teaspoon Pepper
  • 1 tablespoon Butter
  • 1 teaspoon Oil
  • 1 cup mixed vegetables :
    • Shredded Red cabbage
    • Green peas
    • Finely chopped Capsicum
    • Finely chopped Carrot
  • 1 tablespoon Grated cheese

Procedure :

For the Dough

  1. Take wheat flour in a mixing bowl. Add salt, pepper and carom seeds.
  2. Fold the butter in. Now add luke warm water little by little, mixing well continuously.
  3. Knead into a soft dough and set aside for sometime.

For the Filling

  1. Heat oil. Add the vegetables and cook till they turn tender. Add salt, pepper and mix well.
  2. Turn off heat and grate cheese into the vegetables.

For the pie

  1. Grease a flat clean surface and roll out the dough with the help of a rolling pin.
  2. Place the rolled out dough over a greased pie mold. Trim away extra dough with the help of your fingers.
  3. Now fill the vegetable stuffing into the pie. Garnish with a tomato slice.
  4. Make thin, long rolls of the dough and criss-cross over the pie.

Baking :

Preheat oven at 200 ° C . Now place pies in and bake for 12-15 mins.

Variation

You can use beans, mashed potatoes or any other vegetable of your choice for the filling. Sprouts will be the best way to go as they are not only nutritious but also filling.

Diet Pakodas

On a diet? Ever felt yourself reaching out for a sinful bite of delicious pakodas? Well, then this is an answer to what will satisfy your taste buds and keep a check on the calorie meter. Its a healthy snack which is not only nutritious but also keeps you full for longer. Try it for kids who like deep fried junk food. Don’t forget to give it a tastier name before you present it to them 🙂

Ingredients :

  • 4 slices of bread
  • 1 cup whole green moong dal
  • 2 teaspoons of Besan
  • 2 teaspoons of Pudina chutney

Procedure :

  1. Soak moong dal overnight.
  2. Grind it into a paste with water, besan and pudina chutney. Since chutney already contains salt you might need to taste and add more salt accordingly.
  3. Make bread cubes. Dip each cube into the dal batter and toast on a hot greased pan.
  4. Once done on both sides, serve hot with tomato ketchup.

Spring Onion Toasts

Herbs and Spring onions add flavor to this dish which is a cousin of the famous French Toast. Herb powders are readily available in most grocery stores these days. If you dont find them, not to worry. Use your old packet of Pizza seasoning that has been lying in your fridge since your last Pizza Party. Go on, experiment with this yummy breakfast….

Making of bread cubes

Ingredients :

  • 2 eggs
  • 4 slices of bread
  • Mixture of powdered Herbs
  • 1/2 cup Finely chopped spring onions
  • Salt to taste

Procedure :

  1. Beat eggs with salt.
  2. Place 2 slices of bread, one on top of the other and chop it into 4 equal squares.
  3. Dip each cube into the egg batter and toast on a hot greased pan.
  4. Sprinkle some herbs, black pepper and finely chopped spring onions on the upper surface.
  5. After few minutes, turn over the bread cube and cook on the reverse side.
  6. Serve hot Spring onion toasts with tomato ketchup.

Moong dal chaat

Moong Dal with its Chaat accompaniments

Moong Dal Chaat

The moong dal cooked by the method described below is usually used in filling pani puris. We enjoy this chaat at least once a week for breakfast.

Ingredients :

  • 2 cups of whole green moong dal
  • 1/2 teaspoon cumin seeds
  • 1 green chillie
  • 1 onion
  • 1/2 teaspoon Jeera powder
  • 1/2 teaspoon Chaat masala
  • Few curry leaves

Procedure :

  1. Soak 1 cup of moong dal overnight.
  2. Once soaked, microwave it in water for about 20 mins. If you dont have a microwave you can boil the dal in a vessel till its tender.
  3. Strain water out of the dal and set aside.
  4. Heat oil, add cumin seeds, slit green chilly, onions and curry leaves.
  5. Add moong dal to this tempering. Add jeera powder, chaat masala and salt. Saute well.
  6. Garnish with finely cut onions and coriander leaves.
  7. Serve moong dal with curds and sweet ‘n sour tamarind chutney.

Please NOTE :

  1. Care needs to be taken not to soak moong dal for too long as it may sprout.
  2. Do not try to pressure cook the dal as it gets mashed up and then doesnt taste like chaat anymore.
